Ha Dong Dae Jak

Traditional Korean green tea of remarkable quality.

Daejak, "Large Sparrow", is the third, relatively late harvest period. The leaves are more mature and offer slightly less freshness and umami. Compared with the earlier harvests, however, the tea is in some respects softer and more composed. Its more pronounced roasting also gives it a wonderful sweetness.

Hadong is considered one of Korea’s leading origins for green tea. The tea plants used for the teas of our producer, Cho Yun Seok, grow in a wonderfully wild and highly biodiverse tea garden. The setting is ideal: the tea bushes are scattered across the slope and surrounded by wild plants and many shade-giving trees. This produces leaf material of very high quality. The plants are seed-grown, meaning that the bushes are not genetically identical, and are around thirty years old.

Cho Yun Seok specialises in traditional tea production and crafts his teas with exceptional skill. So far, we have not found another Korean green tea in a comparable league. Even his later-harvest teas are highly aromatic and well balanced.
