Wash and preheat all containers: Fill the teapot or gaiwan with hot water, then pour into a jug or directly into the cups and finally empty away.
Pour the tea into the pre-heated pot (3-4g per 1dl pot size) and smell the heated tea leaf thoroughly.
Optionally, a washing infusion can be made for oolong, black and post-fermented teas: pour in tempered water ({{temperature}}) and empty immediately; this first infusion serves to wake up or wash the tea and is not drunk.
Pour the tempered water ({{temperature}}) over the tea and pour off immediately or after a few moments. The infusion can then be enjoyed from the cup in small sips.
Repeat this process until the tea leaves are drained. For the other infusions, the infusion times are gradually extended.

The quantity of tea leaves can be varied according to taste. Anything from 3 to 8g per 1dl is possible. If you use more tea leaves or smaller pots, the infusion time should be shortened accordingly. Larger gaiwan and pots up to 2 or even 3 dl with 4 to 10g of tea can also be brewed.
